Rupert’s At The Edge

Nestled directly across the lake, with views of both Sloan's Lake and the city skyline, sits Rupert's At The Edge. Rupert's is a favorite breakfast, brunch and lunch spot in the area serving up diner favorites like banana nut bread french toast, corned beef hash and a mouth-watering quiche of the day. Named after one of the owner's late, Great Uncle, Rupert's has rightfully earned a great reputation, serving high quality food in an inviting atmosphere. Made from scratch daily and always served with a smile, the menu here does not disappoint. We had the opportunity to speak with the co-owner Tim. Read the interview below!
 
 

Judging by Your Packed Dining Room and Patio, Rupert’s is a Local Favorite! How Did the Restaurant Come to Be? Were You a Chef Before?

Tim: “My wife Susan and I purchased an existing restaurant in Edgewater, Colorado in 2014. We re-branded, changed the menu and it became the first Rupert's. We will be celebrating our 10 year anniversary of the Edgewater Rupert's in March of 2024.” 
 
Tim's family owned Italian restaurants in the Denver Metro area in the 80's and grew up working in various jobs at those restaurants. Tim continued in the restaurant business working for a few chain restaurants for about two decades, moving up the ranks in management. 
 
Susan's family owned the first Taco John's restaurants in the Minneapolis metro and she worked for her family as well. Susan later went on to open three independent coffee shops in Rapid City, SD.
 
 

While We Have Yet to Find Something We Don’t Love, We’re Curious: What is Your Personal Favorite on the Menu?

Tim: “Favorite menu item is a difficult one. I tend to switch between the classic benedict, the corned beef hash, or the Reuben. Susan generally eats the quiche of the day, the avocado club sandwich, or the heirloom hash.”
 
 

In August 2022, You Opened a Second Location in Durango, Co. Do You Have a Connection to the Area? Any Thoughts on Opening Other Locations?

Tim: “We were looking for a new location, not in Denver. I was in Durango visiting friends and saw this restaurant for sale. I had lived in Durango from 1987 to 1990 and always loved Durango. Susan had never been but fell in love when she came back with me to look at the restaurant and check out the area. We plan to make Durango our home for many years to come. We are expanding our Edgewater location and do not see us opening any more unless we were to find an operating partner that wanted to expand the brand.”
